My Journey From Chef to Carnivore Advocate
I trained as a chef back in the 1980s, and at the time, I thought I had a deep understanding of food, nutrition, and health. But I later realised that much of what I learned was outdated and based on the so-called “evidence-based research” that was heavily influenced by the food industry. These studies often had self-interest at their core, shaping dietary guidelines that suited profits more than people’s health.
I had to completely re-educate myself and unlearn decades of misinformation. Through this process, I discovered what Dr. Ken Berry calls the Proper Human Diet (PHD): a way of eating that focuses on nutrient-dense, natural foods, healthy fats, and the power of fasting.
The Food Industry Lies We’ve All Believed
For years, we were told that fat is dangerous, cholesterol is the enemy, and processed “low-fat” foods are healthy. But much of that advice came from marketing campaigns and research funded by big food corporations.
Instead of making us healthier, this has contributed to rising obesity, type 2 diabetes, and heart disease. The truth is, real food heals, while processed food harms.
The Benefits of Meat, Animal Fats, and Protein
For me, beef, ground beef, ground pork, eggs, lamb, and fatty fish provided the nutrients my body was craving. These foods are rich in protein and natural fats, along with essential vitamins and minerals in their most bioavailable form.
Dr. Ken Berry and other carnivore advocates repeatedly highlight how animal-based foods support muscle, brain function, hormones, and long-term energy. Red meat and animal fats are not the villains we were told they were — they are essential for human health.
The Toxic Truth About Processed Seed Oils
One of the biggest lies we’ve been sold is that vegetable and seed oils are “heart-healthy.” The truth is very different. Oils like canola, corn, soybean, sunflower, and even palm oil are highly processed. In their natural state, these oils are unstable and rancid. To make them “edible,” they are put through industrial processing, including ultra-high heat treatments and chemical extraction.
This process not only strips away any potential nutrition but also creates oxidised compounds that are toxic to the body. Once consumed, these oils disrupt your metabolism, damage your cells, and contribute to chronic inflammation — the root cause of many modern diseases.
Replacing these toxic oils with natural fats like butter, tallow, or ghee is one of the most powerful changes you can make for your health.

The Hidden Problems With Modern Fruits and Vegetables
We’ve also been led to believe that all fruits and vegetables are automatically healthy. But modern mass farming tells a different story. Most crops today are grown with pesticides, chemical fertilisers, and in depleted soils. That means the nutrient density is often far lower than it was in previous generations.
Even fruit has changed. Over the past few decades, many popular fruits have been selectively bred or genetically modified to be sweeter, catering to consumer demand for sugar. This has led to much higher levels of fructose, which contributes to blood sugar spikes, insulin resistance, and the skyrocketing rates of type 2 diabetes.
For myself, I keep my vegetable intake limited to green vegetables like broccoli, and I only eat fruit occasionally. When I do, it’s always whole fruit, with the fibre-rich flesh included. I never touch fruit juice, as it strips away fibre and leaves you with a concentrated sugar hit the body isn’t designed to handle.
The Power of Fasting for Healing
Alongside a nutrient-rich diet, fasting has been one of the most transformative tools in my health journey. By simply allowing the body time without food, you activate powerful healing processes.
Intermittent Fasting (16:8)
Eating within an 8-hour window and fasting for 16 hours helps regulate insulin levels, improves energy, and reduces cravings.
One-Meal-a-Day (OMAD)
Going 24 hours with just one nutrient-dense meal builds metabolic flexibility and often leads to effortless weight control.
Extended Fasts (36–48 Hours)
This is where autophagy really kicks in — the body’s process of cleaning out damaged cells and repairing itself. Many people report clearer thinking, reduced inflammation, and improved digestion during this stage.
Multi-Day Fasts (3–5 Days)
With only water and electrolytes, these fasts allow deep metabolic healing. Research shows that extended fasting may regenerate the immune system, improve insulin sensitivity, and trigger cellular repair on a profound level.

By focusing on real food — meat, eggs, fish, natural fats — and pairing it with strategic fasting, I’ve experienced better energy, mental clarity, and health than ever before.
